​¿Qué es un Servicio de Catering?

Se denomina catering al servicio de alimentación institucional o alimentación colectiva que provee una cantidad determinada de comida y bebida en fiestas, eventos y presentaciones de diversa índole.

En algunos casos los salones de fiestas u hoteles y empresas del rubro proveen este servicio junto al alquiler de sus instalaciones; en otros casos, hay empresas especializadas para elaborar y trasladar los alimentos al sitio que disponga el cliente. En el servicio se puede incluir desde la propia comida, la bebida, la mantelería y los cubiertos, hasta el servicio de cocineros, camareros y personal de limpieza posterior al evento.

Tanto en las reuniones importantes del mundo empresarial como en las presentaciones de espectáculos o en las vernissages de las exposiciones plásticas, se recurre al servicio de catering para agasajar a los invitados.

Catering para Eventos

Cuando la mayoría de las personas hablan de un "catering", se refieren al servicio de alimentación prestado por una empresa especializada. Ésta se encarga de preparar, presentar, ofrecer y servir comidas en todo tipo de eventos, que van desde un simple desayuno, hasta servicio completo tipo restaurant con mesoneros, cocina, decoración y limpieza. La comida puede ser preparada completamente en el lugar del evento, ó bien, prepararse antes y darle los toques finales una vez llegue.

Algunos proveedores de catering no preparan alimentos, sino que se encargan de configurar el comedor. Este servicio lo ofrecen normalmente para banquets, convenciones y bodas. Cualquier evento donde existe un personal encargado de servir comida, bebida o cualquier entremés, se considera un evento catering.

La tendencia es hacia la completa satisfacción del cliente con la comida como punto focal. Con la atmósfera adecuada, un profesional experto en eventos catering puede hacer que un evento se convierta en una ocasión especial y memorable. Una comida excelentemente preparada de por sí puede apelar a los sentidos del gusto, el olfato y la vista - incluso el tacto - pero la decoración y el ambiente perfectamente conjugados pueden ser la clave del éxito.

Al realizar presupuesto o una propuesta de servicio, un evento catering pudiera incluir los siguientes elementos:
  • Consideraciones generales: Deben tomarse en cuenta las necesidades específicas del clientes, ya sean de índole dietético o religioso. Por ejemplo: Halal, kosher, vegetarianos y veganos, además de requerimientos por alergias a determinados alimentos. Adicionalmente, los clientes cada día se muestran más interesados en la sostenibilidad y la inocuidad de los alimentos.
  • Aperitivo (Hors d'oeuvre): Deben asegurarse si se van a pasar o se ofrecerán de forma estacionaria. La mayoría de los proveedores de catering concuerdan que es apropiado pasar tres o cuatro variedades de canapés una hora antes de la comida.
  • Servicios de alquiler: Puede incluir mesas, sillas, pista de baile, plantas, utensilios de mesa (vajilla, cubiertos, cristalería, mantelería, posavasos e individuales), cristalería de bar, recipientes para servir, saleros, pimienteros, etc. Debe establecerse si el servicio incluye la colocación de sillas y mesas, y si se van a recoger al finalizar el evento. La mayoría de las empresas no incluyen la instalación y desmontaje en el precio del alquiler.
  • Personal de servicio: Varían de un proveedor a otro, pero por lo general, un evento deberá tener un líder/capitán/gerente del evento, un chef, un ayudante de cocina (sous chef), meseros y un barman. El personal para una cena a la carta es generalmente mayor al que se utiliza en una cena tipo buffet. Entre otras cosas, para una cena a la carta se necesita el doble de la vajilla, y se sirven un mínimo de tres rondas de alimentos, más una de café. En pocas palabras, hay mucho más trabajo. Para hacerlo correctamente, se requiere más o menos de un 10 hasta un 50% más de personal. En un gran evento, esto puede ser considerable, especialmente si se aplican horas de sobretiempo o redobles.
  • Cargos adicionales: Impuesto sobre las ventas, además de cargos por servicio de iluminación, permisos por expendido de licores, permisos de bomberos, drapeados, flores, servicio de valet y guardarropa. Muchos lugares solicitan discretamente obtener una "rebaja" en la factura del catering. Los proveedores de catering se comprometen de forma contractual a no divulgar este monto específico en sus contratos con los clientes. Por lo tanto, el servicio de catering puede costar sustancialmente de un sitio a otro. Además, las empresas de catering a veces tienen que competir con operadores informales o ilegales. Un servicio de catering legítimo deberá tener una licencia de negocio y los permisos sanitarios correspondientes, en los cuales se muestre la dirección fiscal o de negocios.

​Presentaciones

Las presentaciones más comunes para los alimentos son las siguientes:
  • Comidas servidas: Son platos preparados para ser servidos a cada comensal en la mesa. Es semejante al servicio personalizado que se ofrece en los restaurantes. Puede ser un plato único o un menú completo compuesto por una entrada, sopa, plato principal y postre. Puede variar de una cena privada (4 a 6 mesas) hasta un gran banquete corporativo.
  • Comida tipo buffet: Es una comida con autoservicio, donde el propio comensal se sirve los alimentos. Se reserva un área del evento para tal fin, con mesas colocadas de tal forma que los comensales puedan circular con facilidad al servirse. Generalmente está compuesto por dos o más variedades de platos por tipo, es decir, variedad de entradas, principales, ensaladas y contornos.
  • Estaciones de comida: Es similar a la comida tipo buffet, pero organizada formando pequeñas estaciones. En los casos formales, pueden clasificadas por regiones o por estilo de gastronomía. Otros más populares entre banquetes y recepciones están las mesas de queso, donde se colocan variedades de queso, panes, bollería y vino. La estación fondue, donde se colocan el fondue de queso suizo y el fondue de chocolate (oscuro y/o blanco) con una variedad de sumergibles, pedacitos de frutas, bizcochos, etc. Otras estaciones pueden ser de frutas y ensaladas, de cafetería, de sushi, de postres.
  • Miniplatillos y pasapalos: Son pequeños platos fáciles de servir y degustar, aunque laboriosos de preparar debido a su tamaño. Deben poderse comer sin cubiertos o con uno pequeño. Algunos se sirven en pequeñas cucharas orientales, mini-canoas, mini-brochetas, etc. Pueden ser ofrecidos por mesoneros. Están dirigidos a ambientes informales, cocteles y eventos corporativos.
  • Recesos o Coffee Break es un término utilizado para definir los recesos de charlas, reuniones de trabajo, cursos y/o eventos en general, en los cuales se les brinda a los participantes, algo de bebida y pequeños aperitivos para hacer una pausa en la reunión. Estos están compuestos por sandwiches miniatura, hojaldres, dulces, jugos, té y/o café, entre otros.
  • Almuerzos empaquetados. Son prácticos almuerzos servidos en bandejas desechables o en cajas diseñadas con ese fin. Por lo general consisten en sándwich, papas fritas, frutas y postre. También se incluye alguna bebida, como refrescos o jugos envasados. Los sandwiches pueden ser de muchas variedades, tales como jamón, pavo, atún, huevo, pollo, vegetariano y otros. Por supuesto, deben estar identificados debidamente por tipo de sándwich o agrupados para facilitar su identificación. Este tipo de almuerzo se entrega directamente en el lugar escogido por el cliente y se ofrece como comida rápida lo que exige puntualidad y eficiencia en la entrega.  

El Catering en un Evento

En eventos, la comida se transforma en un arte, desde la elección de los alimentos, su combinación con diferentes sabores, texturas y colores y la presentación final en el plato, la bandeja o la mesa. Es tan importante que, generalmente, cuando se organiza un evento que se sirva comida, en el timming siempre se incluyen los horarios y tiempos del servicio de catering los cuales se combinan con el resto de las actividades previstas.

Una de las primeras acciones es elegir el servicio de comidas y bebidas más adecuado para el tipo de evento que estés planificando. Si por ejemplo vas a organizar una conferencia de mañana o tarde, puedes incluir en el receso un servicio de café y decidir si se acompañará con otras bebidas alternativas y algo dulce. En un evento social que se realiza de tarde o noche, tendrás que resolver sí ofrecerás una comida formal, un cocktail, si darás servicio de buffet o se bandejearán distintas comidas para comer parados. En los lanzamientos de productos también se suele ofrecer un servicio de catering informal, compuesto por barra de bebidas y bandejeado de canapés o sandwiches y masas (Siempre “finger food”).

Siempre debes pensar en el tipo de público que va a asistir, y tener en cuenta las comidas especiales, para niños, vegetarianos, celíacos, diabéticos, de bajo colesterol, sin sal, etc.

Si planeas una comida formal, deberás escoger entrada, plato principal y postre, pero generalmente también se incluye una recepción en donde se sirven canapés, empanaditas, cazuelas y otras alternativas para comer con la mano, y también una mesa dulce posterior al postre. Cuando se sirvan platos calientes, asegúrate que no lleguen fríos a la mesa.

Ten en cuenta que es mejor evitar comidas muy condimentadas, difíciles de comer para los participantes, que puedan quedar entre los dientes o tener un aroma muy fuerte, como la cebolla o el ajo. Además, se deberá evitar que las comidas pierdan la cadena de frío en los traslados hasta que se sirve.

En relación a las bebidas, siempre ofrece gaseosas y jugos con versión light, agua y si servirán bebidas con alcohol, cuidar la cantidad que se ofrece.

Si tu evento es empresarial, puedes aprovechar en el servicio de catering personalizando algunos elementos con el logo de la empresa, como ser en servilletas, vasos, copas, centros de mesa y carteles.

Servicio de Comidas - Catering

​Básicamente un catering, por definición, es el servicio profesional que se dedica principalmente a la prestación externa del suministro del servicio de comida preparada, pero también puede tomar parte en abastecer de todo lo necesario para la organización de un banquete u una fiesta. Dicha comida puede ser bien preparada en cocinas centrales, bien elaborada en cocinas in situ (toda la gestión corresponde a la empresa de catering), o subcontratando a terceros en la elaboración total o parcial. También se considera catering a la preparación de comidas en grandes cantidades para ser vendidas en puntos de consumo separados del lugar donde se elaboran. Es una actividad de externalización de servicios de comidas.
Es por eso que el servicio es variable dependiendo del evento que se presente, no se contrata el mismo servicio de catering para un desayuno empresarial que para una cena de gala, por ejemplo.
Entre los diferentes tipos de servicios de catering se destacan:

Catering aperitivo:
Este servicio tiene una duración de entre 15 a 30 minutos. Se realiza un cálculo de dos bocados por persona.

Catering cocktail:
El horario estimado de realización es de 11 a 13 o de 19 a 21 horas. Se calculan de quince a veinte bocados por personas; salados 2/3 y dulce 1/3.

Catering recepción:
Dura aproximadamente tres horas y frecuentemente se realiza a las 20 horas. Se calculan de dieciocho a veinte bocadillos por persona; de los cuales 2/3 son salados y 1/3 dulce.

Catering recepción buffet:
Al igual que el anterior, su duración es de tres horas y el horario estimado es a las 20 horas. Pero en este caso, se ofrecen variedades de platos fríos, calientes y guarniciones.

Catering recepción, comida o banquete:
Se contrata para eventos de larga duración, ya que se calculan entre seis y ocho horas y su horario estimado es de 22 horas. En este catering se calculan seis bocados para la recepción y luego, en la cena, encontramos la entrada, el plato principal, el postre, un servicio de café, el brindis, la mesa dulce y el final de la fiesta.

Catering desayuno de trabajo:
Se calculan entre tres a cinco bocados por hora por persona y se puede elegir entre continental o americano, entre otros.

Catering brunch:
Es la combinación del desayuno y el almuerzo (breakfast – lunch), su horario estimado de servicio es a las 11 horas y su duración aproximada es de una hora y media.

Catering vernissage:
Se ofrecen dos bocados por persona, champagne y vino. Este catering se realiza mayormente en inauguraciones de muestras de pinturas.

Catering vino de honor:
El horario de servicio de este catering es aproximadamente de 11.30 a 12.30 o de 18 a 19 horas. Se calculan dos bocados por persona y se sirven también vinos, y dulces, como oporto y jerez.

Catering coffee break:
Se ofrece café, té, jugos y bocaditos salados y dulces. Dura entre 15 y 30 minutos y es básicamente un corte o recreo.

Cata de Vinos

​Cata de vinos - El arte al evaluar un vino.

Definición
La cata es el acto por el cual, según ciertas normas y reglas, se procede al análisis sensorial de los vinos. La misma puede ser :
  • Comparativa (relacionando entre si varios vinos)
  • A ciegas (ocultando la marca o cualquier otro dato de las etiquetas)
  • Vertical (cata de un mismo vino de diferentes añadas)
  • Varietal (compara solo vinos de la misma variedad de uva)

La cata se realiza en tres fases:
  • Análisis visual: el color, la transparencia, brillo, intensidad, matices del pigmento y formación de burbujas.
  • Análisis de los aromas: frutales, florales, herbáceos, tostados y especiados, valorando su limpieza, complejidad e intensidad.
  • Análisis de las sensaciones en boca: acidez, impresiones dulces, astringencia dada por los taninos, materia y cuerpo, equilibrio, persistencia de los aromas, etc.

La cata de un vino es mas un arte que una ciencia, puesto que exige una sensibilidad y sutilidad en el lenguaje que transmita de manera excitante una impresión fugaz. Actualmente existen maquinas que confirman las apreciaciones poéticas que realizan los buenos catadores. Estas maquinas pueden encontrarse en las mejores bodegas y permiten o ayudan a detectar gran cantidad de compuestos presentes en los vinos.

La técnica de la cata es fácil de aprender, pero es difícil dominar su arte. Los instrumentos típicos necesarios para una cata son:
  • una mesa cubierta de mantel blanco
  • una lámpara que provea buena iluminación
  • un recipiente para el vino que se descarta (escupe)
  • copas deben ser de cristal incoloro y fino y de pie largo, con una boca mas estrecha que su cuerpo (forma "de tulipa").

Análisis visual
Al descorchar una botella lo primero a analizar es su corcho. Este debe estar ligeramente humedecido por el vino, esto demuestra que la botella se ha guardado siempre inclinada. Al presionar el corcho se debe comprobar su flexibilidad, su aroma y confirmar que solo huele a corcho ligeramente envinado. Cuando el corcho presenta olores fuertes y extraños, puede haber contaminación en el vino. Ante esta sospecha, se debe servir un poco de vino en la copa y comprobar su olor. Si esto no alcanza, se prueba el vino en boca y si no resulta agradable se escupe. Se debe rechazar cualquier botella que tenga el corcho estropeado.

Ya comprobado que el corcho esta en buen estado, se sirve el vino en una copa hasta aproximadamente un tercio de su capacidad. Se agita suavemente y se coloca la copa delante de la luz. Se ve así, si esta limpio, sin sedimentos y aquí es donde se decide si conviene decantar el vino o servirlo directamente.

Al mismo tiempo se vera su brillo, si refleja frente a la luz de manera viva y alegre. Si fuese mate y apagado, mostrara defectos. Si se inclina la copa hacia adelante sobre el mantel blanco, se podrá apreciar la intensidad del color y el matiz del vino.
Los vinos blancos con reflejos verdes o sutilmente dorados son vinos jóvenes, y los que tienen reflejos intensamente dorados o ámbar son viejos (han sido criados en madera o han sido mal conservados).
Los tintos jóvenes son de color violáceo, y a medida que envejecen adquieren tonos cobrizos.

Al agitar la copa nuevamente y con suavidad se comprueba, a trasluz, como se forman las lágrimas del vino. Los vinos ricos en glicerina y los de alto contenido alcohólico derraman lágrimas en la copa.

Cuando se evalúan vinos espumosos, se observa que un buen vino debe tener burbujas diminutas, vivas y de incesante formación. Esta cualidad suele ser una promesa de otras cualidades. Las burbujas suben verticalmente formando un interminable rosario espumoso.

Análisis de los aromas
Esta es la fase mas importante y decisiva de la cata, para comenzar se aproxima la nariz a la copa para comprobar de manera global que no hay aromas desagradables en el vino. No deben detectar olores avinagrados, azufres, ajo, caucho o papel. Por esto, es muy importante vigilar la limpieza de la cristalería que se usa en la cata y secarla al aire, para no confundir los aromas.

Al remover la copa y sosteniéndola por su pie, los aromas del vino se airean, y es este el momento de acercar la nariz intentando reconocer los olores del vino. Los mejores vinos son siempre aromáticos y complejos, y se van abriendo, expanden o aparecen en la copa, haciéndose más expresivos a medida que hacen contacto con el aire.

La primera sensación notable, y la más fácil de explicar es la intensidad aromática. Según la potencia se calificara el vino por su intensidad desde débil hasta desarrollada, pasando por otros adjetivos como neutra, insípida, discreta, cerrada, aromática, abierta, expresiva, fuerte o intensa.

El paso siguiente es observar la limpieza aromática, es decir su nitidez desde la ausencia de defectos.

Una noción más subjetiva que requiere experiencia es observar la armonía de los olores: el vino será desagradable o complejo, pasando por común, simple, fino, severo, elegante, refinado, armonioso y con clase.

Para el final, se realiza el ejercicio más espectacular: la identificación de los matices aromáticos.

Se suele proceder identificando un olor: la frambuesa, la vainilla, la rosa u otros. En esta etapa, se utiliza algún término instantáneo que describa el aroma sin mucha reflexión. Pero cuando no se identifica un aroma preciso se observaran impresiones agrupándolas por familias aromáticas.

Para distinguir los aromas se clasifican las diferentes gamas:
  • Los aromas primarios o varietales son muy característicos e identificables, predominan las series florales, frutales, vegetales, minerales y a veces especiadas.
  • Los aromas secundarios procedentes de las levaduras, de la transformación del azúcar en alcohol o de la fermentación malolactica son los mas frecuentes y abundantes en los vinos. En esta gama predominan las flores, las frutas, las especias y las notas vegetales.
  • Para los aromas de crianza o bouquet las gamas se multiplican: florales, frutales, miel, madera, café, chocolates, y otros.

Una vez la copa esta vacía, la historia aromática no se detiene. Aun hasta la última gota del fondo de la copa dirá alguna cosa.

Análisis de las sensaciones en la boca
Después de analizar los aromas se procede a degustar el vino en boca, para ello se debe beber lentamente una pequeña cantidad de vino. Un buche medido para mantenerlo y removerlo en la boca durante unos segundos. El primer contacto del vino se nota en los labios y en la punta de la lengua.

Lo más conveniente suele ser utilizar un termómetro para medir la temperatura del vino en la copa, y así memorizar las sensaciones en las diferentes temperaturas. Típicamente se utilizan 10ºC para los blancos, 11ºC para los rosados, y 16ºC para los tintos.

Siempre que los vinos estén calientes se los debe enfriar, y si están a menos de 6ºC no se los debe catar ya que sus aromas serán imperceptibles.

Para saborear el vino se debe pasar una y otra vez por la lengua, apretándolo contra el paladar, para buscar las sensaciones dulces en la punta de la lengua. La menor o mayor graduación alcohólica, se percibe en boca también, porque el alcohol produce una sensación calida y dulce.

Luego se buscan solo las sensaciones ácidas y amargas, los ácidos se notan en los laterales de la lengua, y los amargos en la parte posterior. Esos sabores amargos se deben a los taninos, donde en el caso de los vinos tintos, los taninos ponen la lengua rasposa y los labios tirantes.

Cuando el vino se calienta en la boca se comienzan a apreciar mas los aromas, ya que la boca y la nariz están íntimamente ligadas.

Por ultimo se traga y todos los aromas y sensaciones persisten en la boca después de ingerido, esa mayor o menor persistencia en boca es la que permitirá distinguirlos.


​How to become a Wine Connoisseur.

​If you're an oenophile (a lover of wine), you're probably wondering what's keeping you from becoming a true connoisseur. Luckily, you don't have to be a wine-maker or have a basement cellar in order to appreciate fine wine. With a notebook and a few bottles handy, you'll be well on your way.

Building Your Wine Know-How
Drink wine with the 4 S's in mind. Even if you don't know much about wine, you probably know that there's a certain way you're supposed to drink it. Truly, you can drink it however you want – but to get the most out of its aroma and taste, a legitimate art has been formed. Here are the basics in four steps:
  • See it. Examine the color. If it's older, a white will be darker and a red will be lighter (by and large). The color can also tell you a bit about the aging processed use. A Chardonnay, for example, will be more golden if aged in oak barrels.
  • Swirl it. Coat the sides of the glass by swirling the wine around gently. This releases the aroma, helping you truly taste what's in front of you.
  • Smell it. If it's white, look for citrus-y or tropical notes, like lemon and lime, or even melon. You may also be able to detect vanilla or oak. Generally speaking, cooler places produce more citrus-y, tangy wines. If it's red, look for berry or plum scents. Cooler places will fall on the red berry side of the spectrum (like strawberry and cherry), while warmer places will showcase darker scents, like blackberry or plum. You'll also find coffee, smoke, and chocolate as major contenders.
  • Sip it. This will be a combination of taste and smell. As you sip it, simply ask yourself whether or not you like it. Then you can move onto why.

Know your tannins and terroir. Oenophiles and connoisseurs will throw around the term "tannin." This is a textural element of wine that makes it "dry." Try a very "dry" wine, and you'll get the sense for what this word means (obviously any liquid isn't actually dry). Tannins are naturally occurring in grapes (and bark and wood and leaves, actually) and they add a bitterness, astringency, and complexity to a wine's flavor. For the record, this applies mostly to red wines.
  • "Terroir" is basically the wine's background – the climate and soil type of where it was grown, the topography, and what other plants were growing in the area. This largely influences the grapes. After all, some wines (American) are bottled by grape, sure, but others (European) are bottled just by region. Terroir is what makes a wine, well, itself.

Get your temperatures right. Each type of wine should be served at a slightly different temperature for its best taste to surface. Here's what you should know before you throw that wine-tasting gala and invite all your friends over to your house:
  • Red wine should be served at room temperature, or about 68°-77°F (20-25° C)
  • Pink or rosé wines should be served slightly chilled around 44°-55°F (7-13° C)
  • White wine and sparkling wine should be kept in the fridge below 40°F (5°C)
  • After that wonderful wine-tasting party, make sure to drink light wines (less alcohol, around 11%) 3 days after opening. Bolder wines are fine for consumption up to 10 days.

Use the right glass. Each type of wine does best in a certain size and shape of glass to open up their aroma to the fullest. To do your wine justice, put it in the right glass:
  • A standard wine glass will do well for most reds. A Cabernet Sauvignon should have a slightly taller, narrower bowl, and make sure your Pinot Noir pour is just an ounce or two.
  • White wines are also good in standard glasses – but Chardonnay needs a slightly wider brim.
  • A Port needs to be in a large flute; Madeira should be in a large hock glass; Sherry is best in a narrow martini-esque glass.
  • Vintage sparkling wines are best in a coupe, tulip, or flute.

Know how to hold the glass, too. You will never be mistaken for a wine connoisseur if you're holding your glass incorrectly. To look like an expert, holding and swilling wine like it's your job, make sure to hold the glass by its stem. This goes double for white wines that are chilled – you don't want the heat of your hands warming the bowl, altering the taste.
  • To swirl the wine around the bowl, rotate at your wrist, not your entire arm. The smell of the wine will then fill the bowl of the glass, opening up its flavor profile.

Familiarize yourself with how to describe a wine's aroma. Being a wine connoisseur is mainly about being able to describe what you're tasting and recognize what's happening on your palette. To get at a wine's aroma, there are generally five categories: fruity, mineral, dairy and nutty, sweet and wooden, and spicy and savory. Here's what "flavors" fall under each:
  • Fruity. Pretty much any fruit, including the aroma of jam
  • Mineral. Flint, stones, earthen, gasoline
  • Dairy and nutty. Butter, cream, yeast, bread, toast, grilled nuts, biscuits, almonds
  • Sweet and wooden. Chocolate, toffee, butterscotch, honey, vanilla, oak, and cedar
  • Spicy and savory. Tobacco, smoke, licorice, pepper, truffles, bacon, coffee, cinnamon

Cultivating a Taste
Go to a wine shop and ask the staff for recommendations. Look for bottles of wine with write-ups near them, award citations and high magazine ratings. Try to go when you know the store is holding a tasting with samples – for many, this is on Saturday mornings. Pick the staff's brains – what are their favorites and why?
  • Come in with a meal plan in mind. That way you can buy wines that match the taste of the food you're serving and start exploring combinations. As a general rule of thumb, red wines go with red meat; white wines go with white meat. And champagne goes with just about everything, but master the basics first.

Attend a local wine tasting or a wine appreciation class. These are held at adult schools, wine-making schools, wineries, and fine restaurants. Don't feel intimidated – many people who think they can distinguish between a $2 bottle of dirt and a nice vintage often can't.
  • If you visit a winery, make time to go in for more than just the tasting. You'll learn how wine is made, see how the grapes are grown and be taught the proper procedure for drinking wine.

Join a wine group. Wine is trendy. There are wine bars, wine stores, wine newsletters, and even wine podcasts. Finding a group of wine-lovers in your area is probably much easier than you think it is. Finding like-minded people who have connections and know what's going on in the area is the first step to developing your expertise.
  • Most groups have individuals at all levels – from those that want to buy their own winery to those who just like drinking wine. There will be a place for you in yours.

Have an informal tasting at home, a friend's house, or a BYOB restaurant where each person brings a different bottle of wine. This way you can taste a bunch of different things without spending a lot of money. And, not to mention, you get a great deal of wine experience (and wine!).
  • Make sure you have palette cleansers to munch on or drink between sips. Stick to bland crackers (like water crackers) or bread (a plain french loaf; nothing grainy) and water. Graber olives and rare roast beef are also sometimes used. Stay away from cheeses and fruits that are normally served with wines, as those will mask the true flavor of each.

Developing Your Palette
Start exploring wine varieties. Many people start with a fruity white white that is subtle in flavor and some happen to stop there. You probably have a couple of wines that you know are safe – so start branching out! Move onto rose wines, and start busting into reds with a vengeance. Even if you don't like it, now you know if you like it or not.
  • Not only should you switch up varieties, but switch up brands and years, too. Just because you dislike one producer's Chardonnay doesn't mean you won't like another's. Every wine is unique – and it can depend on your mood, too.

Find your "Aha!" wine. Plenty of people spend years in the realm of, "Oh, I don't really care for robust reds," or "Moscato is just too sweet," and their expertise and understanding stops there. And then bam – an "aha" wine hits. It's that wine where you can actually taste the cedar, or the smoke, or the chocolate. All of a sudden, you get it. And how do you find your "aha" wine? Trial and error.
  • And an "aha" wine doesn't have to be good or, rather, one you enjoy. It simply has to be one where all of a sudden your palette gets it. It can sort out the variety of aromas in a single glass and knows what it likes and dislikes and better yet, why.

Start researching. Now that you've got your feet wet, start going outside of your own circle for information. Read books and blogs on wine. Try The New Sotheby’s Wine Encyclopedia by Tom Stevenson or wineeducation.com, where you can even take quizzes on your growing wine knowledge. Purchase wine guides. Subscribe to wine magazines. The possibilities are almost endless.
  • Subscribe to free, informative online wine newsletters. Do a quick Google search for reputable websites that are devoted to building a community of wine lovers.
  • GrapeRadio is a podcast devoted to wine – even in the midst of rush hour, you could be honing your skills.

Get bolder and bolder. So you've got the taste of a Pinot Grigio down. You know the difference between a good Merlot and a good Cabernet. But there's so much more to it than that. You've done the basics, so let's get bold. Here's a few to try:
  • Syrah / Shiraz
  • Malbec
  • Petite Sirah
  • Mourvedre / Monastrell
  • Touriga Nacional
  • Cabernet Sauvignon
  • Petit Verdot

Becoming a True Connoisseur
Start widening your "wine-describing" vocabulary. The difference between someone who loves wine and someone who is a wine connoisseur is largely the fact that they can confidently talk about it to others (and accurately, to boot). Here's a few goals to hit when describing your next few glasses:
  • You can name more than 2 fruits as flavors in the wine
  • You can name more than 3 other characteristics such as cinnamon, oregano, roses, chalk or baking spices
  • The palate of the wine changes from the moment you taste it to the moment you swallow, and you can identify how

Try sparkling wines, ice wines and dessert wines. You've gone bold, now let's go a bit off the main path: try other wines, like sparkling, dessert, and ice wines (ice wines are made from grapes that have experienced a frost). They're not the wines you'll be experiencing with a main course at a 5-star restaurant, but they're important nonetheless.
  • Experience wines from a variety of countries and various locales, such as a New Zealand and British wines, or wines from South Dakota and Idaho. Don't just stick to Californian wines or European wines – even when it comes to sweet, dessert wines.

Learn about different grape varieties. Traditionally fine wine was made from mainly French grape varieties, but now a much wider range of grape varieties are being used. Wineries are popping up all over the place, and the "terroir" of your average grape is changing. How do you feel about each region and variety?
  • France, Italy, Spain, China,Turkey, and the US are the main producers of wine (though they are by no means the only), and each have specific varieties of grapes that are able to grown in their respective regions. Because of this, wines from different areas of the world will taste different. What's your take on them?

Go back to the basics. Now that you're a world traveler when it comes to wine, go back to the very first wines you tried. There will be such difference you'll wonder who the person was that tasted it originally, or how it's possible the wine has completely morphed – but it's undeniable that it has. Take that basic Chardonnay that's been sitting in your cupboard and take a sip, basking in your progress.
  • It'll become evident to you how much your palette has changed. It'll also become evident which wines you love and which you won't even bother trying anymore. For a real challenge, get blind taste-testing glasses and see if you remain consistent.

Look for a wine school in your area. Most host courses or tastings, offering you some sort of "certificate" or "accreditation" upon finishing. Local adult schools and restaurants also hold wine appreciation classes. When people ask if you know wine, you can mention that you've even studied it.
  • Though, for the record, just like anything else, you don't need school to become a connoisseur. It's just an easy way to prove that you know your stuff.

Take the Court of Masters test. In America, to be a master sommelier, you need to take the Court of Masters test. There's a course you can take (you have to apply), though you can take the test without taking the course. This is as high as you can get in the wine world – and it comes with quite the badge of respect.
  • They also offer international courses. Currently there are only 140 Master Sommeliers in North America. Ready to be the next?

Una actividad de team building diseñada para probar las habilidades y el conocimiento gastronómicos de los participantes

Nuestra competición te encantará. Es un divertido juego, especialmente diseñado para eventos corporativos o grupos de amigos. Los equipos deberán pasar por 4 estaciones donde harán una introducción a la cata tras la que deberán superar diferentes pruebas de cata a ciegas. Trajaremos habilidades directivas como la toma de decisiones, el trabajo en equipo, la comunicación o la creatividad

  • Aprender sobre la gastronomía: platos principales, postres, vinos, quesos y chocolates
  • Catas a ciegas de diferentes productos
  • Una competición gastronómica divertida especialmente diseñada para eventos de empresa

El grupo se divide en equipos, los cuales tendrán que superar varias pruebas para puntuar y desarrollar sus sentidos: el olfato, el gusto, la intuición... y su capacidad de trabajar en equipo
Cada equipo deberá ir superando pruebas con el objetivo de conseguir la máxima puntuación.

Algunas de las actividades que se pueden realizar dependiendo del tamaño del grupo son:

Los equipos deben coordinarse para conseguir sus objetivos, optimizar sus recursos y satisfacer al cliente final y a sus supervisores.

Durante toda la actividad aprenderán, catarán y realizarán talleres con el objetivo de conseguir ante todo romper barreras aprendiendo y disfrutando.

Misión del grupo es promover la apreciación de la lengua y cultura italiana a través de conversación en lengua italiana, clases de cocina, el cine, el arte, la música, la literatura, degustación de vinos, los deportes, los viajes y el compromiso social. Voy a ayudar a la gente con un fuerte interés en Italia se conectan entre sí, tanto en línea como en persona.

Sólo hay un secreto para aprender a hablar con fluidez otro idioma: practicarlo todas las veces que puedas, lo más que puedas y con quien puedas! Un intercambio de idiomas es mucho más eficaz que una clase de lengua tradicional, ya que se trata de una reunión informal, donde puedes conversar libremente sin estrés por una evaluación formal. Por esta razón aprovecha la oportunidad de practicar en un entorno relajado y agradable! No es necesario tener un alto nivel, sólo hace falta tener ganas de lanzarse y no tardarás en ver los resultados. This meetup group is for anyone who likes Italy and the Italian culture - and who doesn't? Italy is so easy to love!

Although it's called the Italian Language group, a lot of our members don't speak Italian - they just celebrate Italian culture. That means that non-Italian speakers are welcome to join us at events! If you want to practice your Italian, you're encouraged to, but it's not necessary. (The only events where it is necessary are the "Cena in Italiano" dinners and "Parliamo Italiano!" events, where we get together and practice the language.)

This group offers both social events (house parties, dinners, cooking workshops, meal sharing and wine tasting) and Italian conversation. You'll meet people who are interested in language, travel, cooking, and good food & wine; it's an interesting and fun group of people who are very welcoming. Newcomers will feel welcome, so please join us!

This group is open to anyone who wants to make connections with others who share your same interests ....Language, Cooking, Travel, Social, Culture.  If you don't live nearby, you are still welcome to join to chat with others by Skype, email, Google groups or other means...and we will help you make those connections.

The objective of the group is gathering and meeting new people through the organization of homemade food events (dinner, brunch, BBQ).

Our events will feature homemade food sampling prepared by the members of our group (or friends of friends) and will based at members' place or common spaces (i.e. function rooms in residential buildings).

The group is open to foodies and amateurs cooks with the goal of finding a good balance for each event, try amazing food, share stories of life, travel and have fun together: this will make everyone happy!

The group believes that experiencing different cultures and traditions, meeting new friends, when sitting at the same table, sampling traditional, or ethnic home prepared food from another region, country, state, or local, it is an intimate and rich experience.

Cooking together is a great way to learn and share knowledge and to enjoy food and good company.

The basic idea is that we cook together, learn together and share great meals with the new friends we have made while toiling over the pots and pans. Even if you can barely boil water, you are welcome at any of the events!  Since this is not a class and the host is not an expert, the fees are low, basically covering the cost of ingredients.

If you do have skills or knowledge, please pitch in to help your fellow cooks succeed!  That's what it's all about.  I'm hoping to learn from you, too.

Despite these caveats, the food always turns out delicious and the company is great!

Our Italian Conversation Group was created for the purpose of maintaining, promoting and increasing the Italian Culture. Our events thrive on the spontaneity, generosity and enthusiasm of our members.

Most group members live Houston, McAllen or bordering towns. Meeting attendees have various levels of proficiency; some are quite fluent, while others mostly listen. However, no English or Spanish is spoken, and no lessons are given. There are no assigned books or topics of conversation.

The Italian Conversation Group began when several friends got together to practice speaking Italian. The group remained fairly small for about a year – in fact, one time only a single person showed up. The gatherings took place in restaurants but when the group grew, it became impossible to manage the meetings and keep our 'ragione d'essere'– converse in Italian – alive. After trying a few more cafés and restaurants, it was decided to attempt a more cordial atmosphere by meeting in private homes.
Accessibility to our meetings is defined by one simple rule: as long as the participant makes a sincere effort to speak Italian, s/he is always welcome to join in. In fact, at the meetings we do not speak English, Spanish or other languages. Thus, while we remain open to new members, it is in our sole interest that The Italian Conversation Group does not slip into the format of a generic party. We therefore discourage our members from inviting friends who do not speak Italian.
The only reason we feel compelled to formulate these thoughts in English or Spanish is to include in this discourse those individuals whose language skills have not achieved full proficiency. It would be unfair, assuming that everyone approaching our group is capable to discern advanced Italian.
We nevertheless hold true our rule: at the meetings, Italian is required and expected.
At the meetings, 'italiano' is spoken at all levels. You will fit right in, whether you are capable to set off on a philosophical dissertation, or you need to learn how to order at the restaurant.
Members' skills vary from beginners to native speakers.
Accompanied by the fine food and wines our members bring, our meetings are the perfect environments for a non-Italian member who is interested in our culture and language to hear the native tongue here, at home.
Our members can meet a variety of people who have already developed an interest in our secular traditions and language, and expand their network and acquaintances.
Our meetings have become the checkpoint of all the Italians who arrive in Houston or McAllen and the polar information center of anyone who is planning for a trip to Italy. Europeans have fed their nostalgia of the old continent and retrieved those colorful habits and warm hospitality, which are the distinguished marks of the Italian culture.

So, next time you plan to make it to an event, pick-up some bread, grab some Italian cheese, or get some tiramisù, sherbet, Nutella or biscotti.
Wine consumption has never been a concern as it is done very moderately, convivial style.
If you have time, make something you like to cook.

​The Italian Language Conversation Group consists of a diverse and friendly group of people who come together to converse in the Italian language.
Speaking entirely in Italian is very much encouraged. Most of the people speak at an intermediate or an advanced level. However, there are some native speakers as well as a few beginner.

The format for the meetings is open, which means you are free to roam around and speak to whomever you wish about any topic you wish. The more members that you interact with the more you will get to practice speaking in Italian. Some members are more comfortable listening to conversations, while others are more interested in actively participating in a conversation. Please do what makes you feel comfortable.

This meetup group is for anyone who likes Italy and the Italian culture.

Although it's called the Italian Language group, a lot of our members don't speak Italian - they just celebrate Italian culture. That means that non-Italian speakers are welcome to join us at events! If you want to practice your Italian, you're encouraged to, but it's not necessary.

This group offers both social events (house parties, dinners, cooking workshops, meal sharing and wine tasting) and Italian conversation. You'll meet people who are interested in language, travel, cooking, and good food & wine; it's an interesting and fun group of people who are very welcoming. Newcomers will feel welcome, so please join us!

Our events will feature homemade food sampling prepared by the members of our group.

The group is open to foodies and amateurs cooks with the goal of finding a good balance for each event, try amazing food, share stories of life, travel and have fun together: this will make everyone happy!

We schedule a variety of events in Monterrey that provide our "soci" with the opportunity to speak Italian at an intermediate or higher level, meet other Italians and Italian culture lovers and participate in Italian cultural, recreational and language events throughout Monterrey, NL.

*Please note that in order to maintain some kind of reliability with the group, members with 3 "no shows" to events will automatically be removed form the group out of respect for the organizers and other members.

​Group Rules.

Our mission is to promote an appreciation of Italian language and culture through social engagement. We help people with a strong interest in Italy connect with one another, both online and in person. Membership is FREE and we're open to all levels of Italian language from zero to native fluency.

It doesn't cost any money to be a member! Many of the events cost money (food, drinks, admission, etc.) which is why you can pick and choose which ones you attend. Some of our events are spendy, and some are free! Keep in mind that the organizers do have to pay dues to run this group. If you have a good time and can donate a buck or two, please do. It goes a long way to help cover the costs of running the meetup group.

Meetup Group Rules:
1. Events are only open to registered members who RSVP for that event.
2. Members must be at least 18 years of age for our events, 21+ for bar events.
3. Members are responsible to find and check in with us as soon as they arrive.
4. Members who cannot make it must cancel RSVP 24 hours BEFORE an event, allowing members on WAITING LIST to be added.
5. Members who RSVP but do not show up 3 times will be removed from the group.
6. Members who just show up that are not on RSVP list will be removed from the group, WAITING LIST does not count.
7. No business promoting or dating group behavior will be tolerated.
- We REMOVE members that break our rules, are rude, aggressive or socially inappropriate towards our members.
